Beet hummus is such a wonderfully nutrient dense snack, as well as it is very good for the gut. This dish has all of the components that make our guts happy; it has protein and fiber from the chickpeas and beets. This dish also contains antioxidants and phytonutrients from the beets, fresh lemon juice, and garlic, as well as good fats from the tahini and olive oil. This is a beautiful snack that checks all the boxes as it is raw, vegan, composed of unprocessed whole foods, gluten and dairy free, and incredibly easy to make.
Gorgeous Ruby Red Beet Hummus
2 cups of Greenola Sliced Beets
1 can, or 1 ½ cups of chickpeas drained
2/3 cup of tahini
1/3 cup of lemon juice, (approx juice from one lemon)
2 cloves of garlic chopped
1/3 cup of olive oil
1 teaspoon kosher salt
Combine all of the ingredients into a food processor, blend until a smooth and spreadable consistency. Taste and adjust seasonings as needed, adding more salt, lemon juice, or olive oil if needed, and then serve it up with your favourite crackers, pita, bread, veggies etc. And that’s it…simple!
