Hello Spring, so nice to see you again! As Spring is the season of renewal and growth, often marked by a spring cleaning, or detox, here is a quick Spring salad healthy gut reset idea.
Salad
½ jar of Greenola Whole Baby Beets, quartered
2 tablespoons olive oil
4 cups of washed Baby Spinach
1/4 red onion, thinly sliced
2 tablespoons of blue cheese, crumbled
¼ cup toasted walnuts
Sprinkle of your choice of berry
Dressing
3 Tablespoons of balsamic vinegar
1/2 clove garlic, minced
1/4 cup olive oil
salt and pepper to taste
Whisk together olive oil, vinegar, and garlic, season with salt and pepper. Toss beets with dressing. Serve topped with blue cheese, walnut pieces, and fresh berries
